Makery's cocktail collection has a new entry: a Gin and Plum Fizz kit that’s perfect for the weather. It’s garnished with a plum leather that’s a snack in its own right and inspiration for our guide on making fruit leathers.
Fruit leathers are simply pureed fruit that's spread out and dried. We're most familiar with aam papad (a mango leather) but you can use any fruit. It's one of the oldest methods of fruit preservation and a break from homemade jams and pickles. If stored well, fruit leathers will last months.
To make the plum leather from Comorin x Makery's cocktail kit, you'll need:
Plum, Beetroot, Star Anise, Sugar, Citrus Sugar, Salt
Here's how you make it:
- Make a syrup:
Take water, sugar, beetroot and star anise in a pan and heat on a very slow flame. Add a half cup of water for every 4 cups of chopped beetroot. Strain the liquid out and discard what's left over.
- Blend the fruit:
Remove the seeds from the plums and blend them with citrus and star anise beetroot syrup (from #1) in a blender. Strain and whatever collects in the strainer will be used for #3. Note: you can use the rest of the liquid as a plum cordial.
- Dehydrate the fruit mash
Spread the fruit mash over baking sheets at 1/8 to 1/4 inch thickness. and place in an oven to slow cook for 4-5 hours at 65°C (a low temperature is essential).
After five hours, cut the leather into small sheets and sprinkle with sugar. Store in an airtight container.
